Pathworks

A busy Saturday morning, Nev Mac Barry Rob Chris and John started on the job of putting in shuttering and putting down crushed limestone then whacked it down ready for the next stage of concrete pouring that will be done next Saturday. Work was sustained by bacon butties and tea supplied by Norah and Hannah and washed down with Ann's onion soup made with produce from Ann and John's plot. For those interested in recipes.

Onion Soup
400 g Onion chopped small
60g Olive Oil
60ml Butter
1/2 tsp granulated sugar
2 Stock cubes (veg or beef according to preference)
700 ml Water
Salt and pepper to taste
Cook onions and sugar in Olive oil on a low heat for about 30 minutes. Stir occasionaly untill bottom of pan is covered with a rich brown caramelised film. Add the 700ml water with 2 stock cubes. Cover pan and simmer gently for 1 hour. 1 or 2 tbsp of brandy makes a nice addition just before serving.
Cheesey Croutons
Cut slices of French loaf and toast under grill, spread with butter and grated cheese, grill to melt cheese then cut into small cubes.

Place croutons in bowl then ladel the hot onion soup over the croutons.
